Pasta Huancaína

This serves four people.

Ingredients

  • 1/2 cup of vegetable oil
  • 1 cup (250ml) of evaporated milk
  • Huancaina Seasoning Mix ( from your Peruvian Food Experience!)
  • 1 pound of your preferred pasta
  • 1/4 cup of grated Parmesan cheese
  • Fresh parsley or cilantro leaves for garnish
  • Salt and pepper to taste

Step by step method

Step 1

Cook the pasta according to package instructions until al dente. Drain the pasta and set aside.

Step 2

To make the Huancaina sauce, follow the recipe for Huancaina sauce.

Step 3

In a small bowl, whisk together the Huancaina sauce, evaporated milk, salt, and pepper. Set aside.

Step 4

In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic and cook until the onion is soft and translucent, about 5-7 minutes.

Step 5

Add the ground cumin and cayenne pepper to the skillet and cook for an additional minute, stirring constantly.

Step 6

Reduce the heat to low and add the Huancaina sauce mixture to the skillet. Stir well to combine.

Step 7

Add the cooked pasta to the skillet and toss with the Huancaina sauce until the pasta is evenly coated.

Step 8

Sprinkle the grated Parmesan cheese over the pasta and stir gently to incorporate.

Step 9

Garnish with fresh parsley or cilantro leaves, and serve immediately.
