Lomo Saltado

This serves four people.

Ingredients

  • 1 lb sirloin steak cut into strips
  • 1lb of french fries
  • 1 cup of white rice
  • 2 tbsp of vegetable oil
  • ½ red onion
  • 1 medium tomato
  • 2 cloves garlic
  • 1 tbsp of ají amarillo paste (from your Peruvian Food Experience!)
  • 2 tbsp of soy sauce
  • 1 tbsp of white vinegar
  • 1 tbsp of fresh cilantro

Step by step method

Step 1

Boil salted water and add the rice. Cook for 20 minutes or until done.

Step 2

Heat 1 tbsp of vegetable oil in a pan and add the steak. Season with salt and pepper and cook for 5-6 minutes until done.

Step 3

Slice the red onion, tomato and mince the garlic.

Step 4

Deep-fry your french fries or bake them in the oven.

Step 5

Heat another tablespoon of vegetable oil in the pan and cook the red onion until browned. Add the tomato, garlic and ají amarillo paste. Cook for 5 minutes.

Step 6

Add the soy sauce and vinegar and stir well until combined. Cook for another 1-2 minutes.

Step 7

Plate rice and fries. Top with the meat and drizzle the sauce over everything.
