Ingredients

  • 1/2 cup of vegetable oil
  • 1 cup (250ml) of evaporated milk
  • Huancaina Seasoning Mix ( from your Peruvian Food Experience!)
  • 3 potatoes
  • 2 eggs
  • 4-5 lettuce leaves
  • Salt and pepper to taste

Step by step method

Step 1

Pour Huancaina Seasoning Mix ( from your Peruvian Food Experience!) in a bowl, add 1 cup (250 ml) of evaporated milk.

Step 2

Add one teaspoon of vegetable oil, mix by hand or use a blender.

Step 3

Boll 3 potatoes and 2 eggs.

Step 4

Then, let them cool and cut them in slices

Step 5

Place sliced potatoes on a platter and cover them with prepare sauce.

Step 6

Garnish with sliced eggs, black olives and well washed lettuce.

Step 8

Serve the ceviche with slices of boiled sweet potato and rounds of boiled corn. Garnish with additional cilantro if desired.
