  • Aji de Gallina Seasoning Mix ( from your Peruvian Food Experience!)
  • 1 ½  pound of chicken breast
  • 1 tablespoon of vegetable oil
  • Aji Amarillo (from your Peruvian Food Experience!)
  • 1/2 cup of chopped walnuts
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • 4-5 boiled potatoes, sliced
  • 4-5 boiled eggs, sliced
  • 10-12 black olives
  • Fresh parsley or cilantro leaves for garnish

Step by step method

Step 1

Boll 1 ½ chicken breast in 3 ½ cups (30 oz) of water, salt to taste. Shredd chicken breast and reserve.

Step 2

Pour Aji de Gallina Seasoning mix ( from your Peruvian Food Experience!) content in a pot, add chicken stock from step 1 and cook over medium heat for 5 min, stirring while cooking.

Step 3

Add shredded chicken to mixture and cook for 5 more minutes. Salt to taste.

Step 4

To serve, arrange the sliced boiled potatoes on a platter and spoon the chicken and sauce mixture over the top. Garnish with sliced boiled eggs, black olives, and fresh parsley or cilantro leaves. Add some parmesan cheese and chopped walnuts or pecans.
