Ingredients
What do you need?
Potato Layer:
- 2lbs of cooked yellow potatoes
- ¼ cup of olive oil
- ¼ cup of lime juice
Filling:
- 3 tbsp of mayonnaise
- 1 tsp of lime juice
- 1 ripe avocado
- 1 tbsp of minced parsley
- Cooked shredded chicken / one can of tuna / cooked shrimps
Step by step method
Step 1
Mash potatoes to a puree and mix with olive oil and lemon juice until smooth.
Step 2
Mix your protein of choice with the mayonnaise, lime juice and parsley.
Step 3
Fill a pastry ring or similar round shape (you can also form the potato with your hands) with the potato puree to create a 1inch high disk of potato. Repeat the process, you will need two disks per causa.
Step 4
Layer your filling onto one of the potato discs, smooth out and top with sliced avocado and the second potato disk.
Step 5
Garnish with the Peruvian Olives from your Peruvian Food Experience and enjoy!
Tips & variations
If you like a bit of spice, add some of the Ají Amarillo Paste from your Peruvian Food Experience to the potato mixture!
